Using blocks of IPs for facing the internet

I have a block of static external IPs with my service provider. I want to make use of them, by assigning some individual IPs to workstations and devices in my home so I can finally track internet usage across my home network. I have the 7800N.
I was told by ISP that I'd need to do some LAN side changes on the router. I'm told I need to separate those devices which will sit behind the NAT and those which would be internet facing and have the NAT disabled.
Is this possible? Further still, is this wise? - since the idea of having my Sonos or Apple TV facing the internet (without firewall protection) is a bit concerning
