Could someone please enlighten me as to exactly what this function does? In what way is it different from saving config to an external drive?

Saving to flash will save the config to flash memory inside the 7800N, so if you power cycle the device it will save your settings once rebooted up. If you reset back to factory default settings all flash memory will be restored to default settings.(Clear all settings you have entered)
Saving the config to a computer or hard drive is incase you mess up the config and need to restore it, even after a reset back to factory default settings, you can still restore the settings from the back up file.
Also the backup config file is good when you need support, as UK Support will request if needed.

Thanks for this. So basically the flash settings are reset on a "factory" reboot, but can't you just do a restore from an external drive if you do have to do a factory reset? In other words, why bother to save the config to flash?

Just in case of a power cut and you are not home to restore the config or if some resellers want to sell the product pre-configured.
You can also restart the unit with current settings, which is needed for a WAN change, if you couldn't save to the flash, the router will restart without your settings entered.
